Frozen line questions

What does IQF mean?

Individually quick frozen: each piece freezes separately in high-velocity cold air, so the product stays free-flowing instead of freezing into a block.

Why blanch before freezing?

Blanching deactivates enzymes so color, flavor and texture hold up in frozen storage. Water or steam blanching is chosen by product.

Do you build the freezer?

No. Bigtem does not manufacture freezers. The line uses an IQF freezer integrated from a partner manufacturer, selected to fit your line. Bigtem engineers the dewatering and cooling before it and the conveying and packing after it, and integrates it into the line.

Can the line run several products?

Yes. Many frozen vegetable lines run peas, beans, carrots, broccoli and corn in different seasons with change parts.
