How it works

A batch steam peeler heats only the outer layer of the product, then releases the pressure so the skin flashes off.

  1. Weigh & fill

A weighing hopper doses each batch into the pressure vessel.
  2. Steam in a rotating vessel

The vessel is sealed, steam is injected and the vessel rotates for all-round exposure.
  3. Condensate removal

Condensate is drained so a water layer doesn’t insulate the product and soften the peel effect.
  4. Flash release & discharge

Rapid pressure release lifts the skin. A screw conveyor carries the product to a brush or dry-peel finisher.

Suitable crops

  • Potatoes for fries, chips, fresh-cut and dehydrated products
  • Sweet potatoes
  • Carrots, red beets and other root crops

For peaches, tomatoes, peppers and other delicate produce, see the Gentle steam peeler.

Peel loss

Published University of Maine trials on Maine potatoes found lower total peeling loss with steam than with abrasive peeling under the test conditions (UMaine Agricultural Experiment Station Bulletin 624). Results on your crop depend on variety, storage and peel target, so we confirm sizing and settings with your data.

DORUK steam peeler questions

Which model fits about 10 t/h of potatoes?

On the spec sheet the DORUK 700 is rated at about 9 to 14 t/h of potatoes. Final sizing depends on variety, tuber size and peel target, so we confirm it with your data.

How much steam do I need?

From about 200 kg/h (441 lb/h) for the DORUK 125 up to about 1,500 kg/h (3,307 lb/h) for the DORUK 1250, at up to 15 bar (218 psi). We check it against your boiler and header.

Can it run on 480V/60Hz or 575V/60Hz?

Yes. Bigtem builds to any voltage the customer specifies.

Is the pressure vessel certified for my state or province?

Bigtem pressure vessels have US and Canadian certificates. Tell us where the plant is and we confirm the documents that ship with your machine.

What happens to the peel?

Peel is removed in a brush or dry-peel finisher after discharge, which keeps the peel concentrated for handling as by-product.

Can a DORUK replace our old steam peeler?

Yes. See the steam peeler replacement program for aging peelers from any manufacturer.
