Hydrocutter: Water-Knife Cutting for French Fries and Potato Products
Bigtem’s hydro cutting system pumps potatoes through a fixed knife assembly at speed. A dual cutting head switches automatically when a knife is dull or blocked, so the line keeps running.
- Offset-volute pump for gentle product transport
- Dual water-knife head with automatic switching
- Sliver remover and inspection after cutting
- Strips, wedges and flat cuts

How hydro cutting works
In the fry line
The hydrocutter sits between the steam peeler and the blanchers. Starch released during cutting can be recovered from the process water with a decanter.
Specifications are configured to your line throughput and cut sizes. Ask us for the data sheet for your configuration.

Hydrocutter questions
Why cut with water instead of a mechanical cutter?
Potatoes are carried by water through a fixed knife assembly, which gives a clean cut surface with less shattering and keeps product moving in a closed system.
What happens when a knife gets dull or blocked?
The dual cutting head switches to the second knife set automatically, so the line keeps running while the first set is serviced.
Which cuts can it make?
Straight strips in different sizes, wedges and flat cuts, depending on the knife assembly.
Can it be added to an existing line?
Yes. The hydrocutter is sold as a stand-alone module and matched to your peeler, blancher and line throughput.
Can the starch be recovered?
Yes. Starch can be recovered from cutting and blanching water with a decanter as part of the line.
