Utility Planning Checklist: Steam, Water, Air and Power
Many installation delays come from utilities, not machines. Use this checklist to collect the facts a Bigtem engineer needs to outline utilities for a new machine or line.
Bigtem USA engineering guide · updated October 2026

- Measure utilities at the point of use, not at the source.
- Plan exhaust, condensate and drainage routes with the layout.
- State your voltage early; Bigtem builds to it.
Steam
- Pressure available at the point of use (bar or psi), not just at the boiler
- Boiler capacity, and what else draws steam at peak
- Header size and route to the new equipment
- Condensate return or drain point
- Steam peeler exhaust route and separator location
Water
- Supply pressure and flow at the area
- Hot water needs (blanchers, cleaning)
- Water re-use and filtration (washers, flumes, abrasive peelers)
- Discharge limits and pre-treatment
- Quality of water that touches product
Compressed air
- Supply pressure at the area
- Dry, oil-free air for valves and actuators
- Peak demand of packaging and pneumatic gates
Electrical
- Plant voltage and frequency (for example 480V/60Hz or 575V/60Hz)
- Available capacity at the panel
- Panel and motor control center locations, away from wet zones
- Control network and remote access policy
- UL requirement for panels (available on request)
Building
- Floor drains, slopes and load capacity
- Ceiling height for elevators, platforms and peeler hoppers
- Delivery route and door sizes
- Fire protection and exhaust for fryers
- Space for maintenance and future expansion

Utility planning FAQ
What steam pressure does a steam peeler need?
DORUK steam peelers are rated up to 15 bar (218 psi), and steam use per model is on the spec sheet. Tell us the pressure available at the peeler and we confirm what the cycle needs.
Can you build to Canadian 575V?
Yes. Bigtem builds to the voltage you specify, for example 575V/60Hz in Canada or 480V/60Hz in the US.
Do I need all this before asking for a quote?
No. A quote request with crop and tonnage is enough to start. The checklist speeds up the utility outline.

A Bigtem USA engineer will review your project and follow up with a recommended configuration and a utilities outline.
